My favorite Almost Healthy Breakfasts

DO NOT SKIP BREAKFAST! Can I yell that any louder?!! Your metabolism is highest earlier in the day. So if you don't eat breakfast it slows down your metabolism.  In other words...eat breakfast so you can increase your metabolism so you can lose weight! Eating breakfast will also help put you in a good mood and get your brain working for the day.

Here are two of my favorite breakfasts.  They are both somewhat healthy but oh so good.

Spanish Scramble
1 whole egg
3 egg whites
1 T skim milk
1/4 tsp cumin
1/8 tsp pepper
1 slice reduced fat cheese
1/4 cup salsa

Whisk all ingredients until frothy. Warm greased skillet and add egg mixture. Let sit until set around the edges and bottom of skillet.  Using spatula lift and turn eggs. When eggs are done place on plate and add salsa.

S'more Oatmeal
1/2 c oatmeal
1 Diet packet hot cocoa mix (25 calorie)
1 cup skim milk
2 tsp choc chips
2 T mini marshmallows
1 graham cracker 1/4 of sheet

Mix Oatmeal, hot chocolate mix, and milk. Make oatmeal according to package directions. Add chocolate chips, marshmallows and smashed graham cracker.  Add instant coffee for a change!
